August 22, 2024The remarkable nutritional overview of ragi, or finger millet, has made it a popular choice for those looking for better dessert alternatives. As a nutrient-dense powerhouse that can be a great addition to your diet, ragi is well-known for its high calcium and fiber levels. I’m thrilled to share with you today a tasty and simple Ragi Chocolate Fudge Recipe that is naturally sweetened with honey. You can fulfill your sweet taste with this decadent dessert and not feel guilty about it.
Also, in this Ragi Chocolate Fudge Recipe I used Tiny Dots Sprouted Ragi Flour. The reason is that sprouted flour usually has an enhanced nutritional profile and digestibility compared to regular ragi flour. Sprouting ragi increases the bioavailability of essential nutrients like calcium, iron, and vitamins, making them easier for the body to absorb. It also reduces anti-nutritional factors such as phytic acid, which can inhibit mineral absorption. Further, sprouted ragi flour has a lower glycemic index, helping to regulate blood sugar levels, and it offers improved protein quality and digestibility, making it an excellent choice than regular ones.

Speciality of using Ragi
Feel free to use other flours like whole wheat flour, bajra flour or traditional rice flour. But here are the some extraordinary benefits of ragi that made this recipe extra special.
✔️High in calcium, iron, protein, fiber, and essential amino acids. Also, ragi has got a distinct flavor making it suitable for baking and desserts.
✔️It is a source of many essential amino acids like methionine, which are important for muscle repair, skin and hair health.
✔️Its high calcium content is beneficial for bone development and maintenance.
✔️Ragi helps in boosting milk production in lactating mothers and great weaning food for babies.
✔️For every 100 gms ragi has 3.9 mg of iron ! So having this millet frequently helps in preventing anemia.
✔️Due to the unpolished nature of this cereal, it is loaded with fiber. Fiber aids in better digestion and prevents constipation.
✔️The presence of magnesium and potassium helps in maintaining a healthy heart by reducing the risk of stroke and hypertension. Benefits
Ingredients:
– 1 cup sprouted ragi flour
– 1/4 cup cocoa powder
– 1/2 cup honey
– 1/4 cup ghee (clarified butter) or coconut oil
– 1/2 cup chopped nuts (almonds, cashews, walnuts, etc.)
– 1/4 cup milk or almond milk
– 1/2 teaspoon vanilla extract
– A pinch of salt
Instructions:
Step 1 : Start by heating a pan over low heat and dry roasting the ragi flour until it becomes aromatic. Usually, this step takes around five minutes. Make sure to stir constantly this will help avoid sticking & burning the flour. Once done , allow it to cool.
Step 2 : Now mix the honey ( I used raw forest honey here ! ) and cocoa powder together in a bowl. Mix until the mixture is well blended and smooth.
Step 3 : Heat a pan and add ghee or coconut oil and melt it completely. Now add roasted ragi flour to the melted ghee and give a quick mix.
Step 4 : Next add the honey-cocoa mixture, stirring constantly to prevent lumps.
Step 5 : Stirring continuously, gradually add the milk to the mixture until it thickens. Add a small amount of salt, vanilla extract, and chopped nuts. Till everything is well incorporated, thoroughly mixed.
Step 6 : Line up a tray with paper or apply some butter and transfer the mixture into a tray . To achieve equal thickness, use a spatula to flatten the top.
Step 7 : Allow the fudge to cool for fifteen to twenty minutes at room temperature. After that, chill it for a minimum of one hour to solidify. Cut the fudge into the desired shapes once it has set.
